I recently started making madeleines and I just finished the recipe. I will show you how to make them.

12 madeleines
2 eggs
80g sugar
60g baking powder
30 g ground almonds
4g green tea powder
5g baking powder
60g unsalted butter
♥ Recipe
Matcha madeleine
1. Melt unsalted butter in a pan.
2. Mix all the eggs and sugar together.
3. Sift in flour, ground almonds, baking powder and matcha.
4. Place in bag and refract for at least 1 hour.
5. Bring the cooled dough to about 20℃.
6. Butter mold. Squeeze out 25g of dough for each mold.
7. Bake in the preheated oven at 210℃ for 8~12 minutes.

Madeleines with burnt butter
2 eggs
80g cane sugar
A little salt
60g baking powder
30 g ground almonds
5g baking powder
65 g unsalted butter

Madeleine with burnt butter
1. Melt unsalted butter in a pan. Once melted, heat the butter, stirring constantly until the butter turns brown and cools to about 40℃.
2. Mix the whole egg, sugar and salt.
3. Sift the flour, almond flour and baking powder into the sieve.
4. Place in bag and refract for at least 1 hour.
5. Bring the cooled dough to about 20℃.
6. Butter mold. Squeeze out 25g of dough for each mold.
7. Bake in the preheated oven at 210℃ for 8~12 minutes.

Chocolate cake
2 eggs
80g sugar
60g baking powder
30 g ground almonds
5g cocoa powder
5g baking powder
50g unsalted butter
20g sweet chocolate

Chocolate madeleine
1. Melt unsalted butter in a pan. Turn off the heat, add the sweet chocolate, mix well and let cool to about 40°C.
2. Mix all the eggs and sugar together.
3. Sift in flour, ground almonds, baking powder and cocoa.
4. Place in bag and refract for at least 1 hour.
5. Bring the cooled dough to about 20℃.
6. Butter mold. Squeeze out 25g of dough for each mold.
7. Bake in the preheated oven at 210℃ for 8~12 minutes.
