This is a softer dough, cover with flour and let rest, 150 grams (1 cup) all-purpose flour/flour, 90 grams (6 tablespoons) unsalted butter. Knead the butter into the dough, this is the pastry dough. 3. Now for the filling, 475 grams (1 can) of sweet red beans, add to the pan, 16 grams (2 tablespoons) of corn starch, because the canned red beans are wet, they should be fried slightly dry.

4. Cook on low heat, stir-fry for about 5 minutes, stir-fry a little dry, sticky dough. Remove from oven and let cool, after 30 minutes, divide two dough balls into 2 parts, each part, take out 1 part dough, knead the dough and flatten the rolling pin. Flip larger side, turn over and place dough block 2 on top.

5. Use a rolling pin 1 to wrap dough 2, close and pinch tightly. Flip it over, use a rolling pin, then roll it from the center to the sides, making it bigger. Roll the dough into a square, then flip the dough over. Fold twice and press to expel all the air inside. Continue rolling with a rolling pin to make the dough bigger. Roll from one side and roll back into a cylinder. Cut in half and divide into 2 parts. Do the same with the remaining 2 pieces of dough and roll it up, cut it in half and divide it into 2 parts. This way you get 4 equal length dough pieces.

6. Cut 4 times and divide into 16 parts, take one portion of dough, pinch both sides tightly, turn over, fold all four corners inward and pinch round. Flatten and roll into a round dough sheet. Place the red bean ball you made earlier, shape it along the edge. Pinch, seal, knead until round and flat, the surface of the mooncake, or omit it if you don’t have one.
