I made tiramisu mascarpone that melts in your mouth when you take a bite. I bake ladyfinger cookies in a grid pattern, but it’s nice to have the cream filled in between the cookies so they’re softer and stacked one by one.
Ingredient
2 egg whites
60g sugar
2 egg yolks
2g vanilla extract
55g soft flour
5g cornstarch
120g water
15g sugar
3g coffee powder
3g gelatin + 15g water
3 egg yolks
60g sugar
360g cold mascarpone cheese
10g kale
180g fresh cream
Creation process
Making Lady Fingers
1. Divide the sugar into the egg whites 3 times and make the meringue.
2. Add egg yolks and vanilla extract and mix by whisking on low speed.
3. Sift in the flour and cornstarch and mix slowly and evenly so that the meringue doesn’t burn.
4. Place in an ice cream bag and press into a mesh shape on a baking tray (36.8cm x 24.1cm).
5. Sprinkle with powdered sugar about 3 times and bake in the oven at 190 degrees for about 11 minutes.
6. After it has cooled slightly, turn it over, remove the paper and prepare by cutting into 15cm . molds

7. Mix sugar and instant coffee powder into warm water and dissolve evenly.
Make Tiramisu Ice Cream
8. Add the gelatin powder to the water, mix well and let stand (at least 10 minutes).
9. Add sugar to egg yolks, mix well and heat in a double boiler over a pot of boiling water.
10. Increase the temperature to about 70 degrees while stirring constantly to avoid overcooking the eggs.
11. Beat egg yolks until light in color and increase in volume (let cool to about 40 degrees before using)
12. Use a spatula to blend the chilled and smoothed mascarpone cheese.
13. Add the beaten egg yolks and mix well.
14. Add Kahlua, mix well and heat the soaked gelatin in the microwave for about 15 seconds.
15. Add melted gelatin and mix well.
16. Whip about 70% fresh cream, divide into 2 parts.
17. Put a strip of mousse in the frame, add the lady finger and soak with coffee syrup.
18. Repeat the whipping and add the thumbs.
19. Flatten the top and let it harden in the refrigerator for at least 3 hours.
20. Sprinkle cocoa powder on top and cut into pieces.
