This recipe can make 11-12 vanilla windows. They are low in sugar but surprisingly delicious! Trust me, you will think about this recipe every week.

Light Butter 40g
Cake flour 45g
Egg 110g
Chopped almonds
Mascarpone 40g

Bake 170°C/347°F 35-40 minutes

Making
1. Heat water, milk, salt, sugar and unsalted butter together until boiling. Turn off the heat and add low-gluten flour, mix well to form a dough.
2. Reduce heat to low, cook while stirring until a thin film forms on the bottom of the pot. Transfer the dough to a bowl to cool.
3. Beat the eggs and gradually add them to the dough in small portions. When the dough forms an inverted triangle, transfer it to a piping bag. Use your favorite pipe tip to create long strips, brush with egg wash and sprinkle with chopped almonds. Bake and cool after removing from the oven.
4. To make the vanilla cheese filling, mix the whipped cream, sugar, mascarpone, and vanilla powder until smooth and thick. Transfer to a piping bag. Cut the choux pastry, put the vanilla ice cream inside and cover the other half. Sprinkle with powdered sugar to finish!
