I made a yogurt soufflé that I enjoy in a different way by adding savory crumbs! It’s delicious even if you’re just baking, but I sprinkled soboro on it a little differently and baked it. Baked for a long time at low heat, it is so soft and moist that it melts in one bite.

100g almond powder
90g soft flour
60g sugar
75 g cold unsalted butter
3 egg yolks
30 g vegetable oil
1g salt
200g Greek yogurt
2g vanilla extract
30g soft flour
15g cornstarch
3 egg whites
5g lemon juice
65 g sugar

1. Mix almond flour and flour, add sugar and mix well.
2. Add cold butter and mash and mix well to form like beans and small rice.
3. Put about 2/3 of the crumbs into the mold and press firmly. Make Yogurt Soufflé
4. Add vegetable oil and salt to egg yolks and mix well.
5. Add yogurt and vanilla extract and mix well.
6. Sift the flour and cornstarch into the mix.
7. Beat egg whites with lemon juice and add sugar in 3 parts to form soft meringues.
8. Add about 1/3 of the meringue to the egg yolk mixture and mix well.
9. Put all the egg yolk mixture into the meringue bowl and mix well.
10. Pour the soufflé into the pan, flatten and sprinkle with crumbs.
11. Pour hot water on the outside of the mold and bake in a 150 degree oven for 60 minutes.
