Fascinated With Beautiful Layers | Strawberry Cheesecake No Bake

I made an oven-free strawberry cheesecake with lots of strawberries. I put a lot of strawberry puree into the cheesecake dough and it has a lot of strawberry flavor. It’s hard to transfer the color to the outside, but I feel proud when I see the finished look. The consistency of the cheesecake dough should be a bit thin for the layers to come out nicely. If the dough becomes hard, you can microwave the dough for about 5 seconds to adjust the consistency.

Ingredient

Whole Wheat Biscuits 60g

25g melted unsalted butter

4g gelatin + 20g water

160g cream cheese

30g sugar

2g vanilla extract

5g lemon juice

120g fresh cream

6 strawberries

330g frozen strawberries

70g sugar

5g lemon juice

4g gelatin + 20g water

6g gelatin + 30g water

220g cream cheese

25g sugar

3g vanilla extract

220g fresh cream

food coloring

60 g Wholemeal Cookies

25g melted unsalted butter

Recipe

1. Add melted butter to whole wheat crackers and mix well

2. Pour into a 12cm mousse mold, flatten it and put it in the fridge.

Basic cheesecake dough

3. Add gelatin powder to water, mix well and let stand for 10 minutes.

4. Add the sugar, vanilla extract and lime juice to the preheated cream cheese in the microwave for about 20 seconds and mix well.

5. Heat the soaked gelatin in the microwave for about 15 seconds to melt, then add it and mix well.

6. Whip about 50% whipped cream

7. Add to cream cheese mixture and mix well.

8. Pour the cheesecake batter into the 12cm mousse and press the strawberries in.

9. Pour in the rest of the cheesecake batter, flatten and refrigerate for at least 2 hours.

 

Pureed strawberry

10. Add sugar to frozen strawberries and cook over low heat.

11. Stir in the middle

12. When the mixture thickens, add lemon juice and cook for about 3 minutes.

13. Add gelatin powder to water, mix well and let stand for 10 minutes.

14. Strawberry puree.

15. Add soaked gelatin, mix well and let stand for a while at room temperature.

Strawberry cheesecake dough

16. Add gelatin powder to water, mix well and let stand for 10 minutes.

17. Add the sugar to the cream cheese that has been heated in the microwave for about 20 seconds and mix well.

18. Heat the soaked gelatin in the microwave for about 15 seconds to melt.

19. Add to cheesecake dough, add vanilla extract and mix.

20. Whip about 50% whipped cream

21. Add cheesecake powder and mix well.

22. Add about 60g of strawberry puree to the cheesecake batter and mix well.

23. Put 80g in the ice cream bag

24. Add 60g of strawberry puree and some food coloring (red) to the remaining cheesecake batter and mix well.

25. Put 160g into the ice cream bag, add strawberry juice and food coloring several times, then put 230g and 300g into the ice cream bag

Little by little

26. Place about 3 kitchen towels on top of each other, cover with cling film and place a hardened 12cm mold on top of the center.

27. Cover the 16cm mold, pull the food wrap and press down firmly.

28. Add 75g of the darkest color and let it harden in the fridge for about 20 minutes.

29. Repeat, add another 75g of color and harden

30. Pour about 150g of the 2nd dark color on the 6th layer and let it harden in the fridge.

31. Put 220g of the darkest color on the last layer and let it harden in the fridge for about 3 hours.
