Lots of berries | No Bake Berry Cheesecake Recipe

I made an oven-free cheesecake with lots of blueberry and strawberry puree. My favorite is the cake has a beautiful color, lots of strawberries and feels the full flavor of the fruit. You can harden it flat, but I tried hardening it with a wavy pattern, it looks cute and gives a spring feel. If you want a clear color, you can puree it in a mixer and mix it with the cheesecake. I used it without grinding it because the meat got stuck in it and looked so appetizing. I think it’s a cheesecake that becomes the highlight without any other decorations

150g frozen strawberries

35g sugar

4g lemon juice

65 g frozen blueberries

30g sugar

3g lemon juice

40g melted unsalted butter

120g cream cheese

3g gelatin

60g fresh cream

50g blueberry juice

120g cream cheese

25g sugar

Strawberry puree 100g

♥ Recipe

1. Put the frozen strawberries and sugar in a pot and crush the strawberries, when you see the strawberries, add lemon juice, boil a little more and then put them in a bowl to cool.

2. Make blueberry juice in the same way.

3. Pour melted unsalted butter into the mashed Daije biscuits, mix well, place into a 15cm mold, press down firmly and set in the fridge to harden.

4. Lightly beat cream cheese, soak in cold water for about 10 minutes, microwave for about 10 seconds, let gelatin melt completely and mix well.

5. Gently whip the whipped cream until slightly frothy, add the cream cheese and mix well, then add the cooled blueberry puree and mix well.

6. Transfer to a piping bag, shape on the side of the frame, press and set in the freezer for about 20 minutes.

7. Add sugar to cream cheese, beat lightly, add melted gelatin and mix well, then add thinly whipped fresh cream and mix well.

8. Put in ice cream bag, shape into a mold and then put in the freezer for about 20 minutes to harden.

9. Lightly beat cream cheese, add melted gelatin, mix well, then add whipped cream and mix well, then add strawberry puree and mix well.

10. Pour into the mold, press flat and put in the refrigerator for about 3 hours to harden.
