Beautiful Chocolate Sunflower Tart

Hi, when I first saw the image, I started because I wanted to make it so much. It’s a really interesting job, I think. Flavored with banana chocolate mousse, chocolate ganache and almond hazelnut praline. The taste of the dark chocolate tart is really amazing.

[ Ingredients]

♥ Tarts and Petals (Four 9cm tarts)

240g cake flour

84g powdered sugar

1g salt

96 g butter

44 g eggs

2g vanilla bean powder

♥ Chocolate Banana Mousse

18g heavy cream

1 egg yolk

15g sugar

1 g gelatin

40g fresh banana

55g dark chocolate

70g fresh cream

♥ Chocolate ganache

56g dark chocolate

50g heavy cream

6g Kahlua

♥ Almond Hazelnut Praline

30g almonds

30 g hazelnuts

60 g sugar

40g of water

[Recipe]

1. Make dough for tart shells and sun petals. Only took out 240g. It will be used for tarts. Mix the rest of the dough with yellow food coloring.

2. Roll the dough to a thickness of 3mm. Cover with Teflon paper or parchment paper and refrigerate. The tart dough becomes soft easily. To make it easy, chill it in the freezer during work.

3. You need 12 sunflower petals for each cake. Cut each circle in half with a cookie cutter. Bake for 4 minutes, then take it out once in a while. Cover with a sheet of Teflon paper and bake for an additional 6 minutes. This will prevent the petals from turning brown.

4. Make banana chocolate mousse. Pour the mousse into 4 tart shells and place in the freezer for a while. In the meantime, make the ganache. If you don’t have Kahlua, add 6g to the hot heavy cream first. Put it in the refrigerator.
