95g milk

A pinch of salt

150g All-purpose flour

15ml olive oil

240g sweet potato

15ml water

12g white sugar

14g softened unsalted butter

100g mozzarella cheese


1. 95g milk, a pinch of salt. Mix well, 150g All-purpose flour. Mix well until the dough is combined, 15ml olive oil. Knead the dough, refrigerate for at least 30 minutes.

2. 240g sweet potato, chop the sweet potato into small pieces. Place the chopped sweet potato into a microwave-safe bowl. Add 15ml water. Cover with plastic wrap, poke some holes in the plastic wrap using a toothpick then microwave for 5 minutes.

3. After microwaving, mash the sweet potato, 12g white sugar, 14g softened unsalted butter. Mix well using a spatula, take the dough. Sprinkle some flour on a kneading board, move the dough to the kneading board, flatten the dough with a rolling pin. The diameter is about 28cm.

4. 100g mozzarella cheese, add the sweet potato on top of the cheese. Spread evenly, add more cheese on top of the sweet potato. Wrap up the filling by pinching the edges of the dough, the diameter is about 21cm.

5. Low heat, add some olive oil or butter to the pan, brush the oil in the pan to spread evenly, place the dough into the pan. Spin the pancake slowly to make sure it doesn’t stick to the pan, add some olive oil or butter on top of the pancake, brush evenly.

6. Use a board or plate to flip the pancake over. Flip again and fry until the dough is light golden brown . Done! Cut the pancake into slices.
