Easy Potato Brunch with 1 Potato | Potato Pancake | Hash Brown | Egg Potato Omelette

It is made quickly and deliciously with simple ingredients. It’s a good recipe for brunch, as a side dish, or as a snack for kids. It’s a two-serving recipe, but it’s ok to split it in half and make smaller portions for one person. It looks and tastes good, and the whole family loves it.

200g Potato (before peeling)

30g Carrots

40g Sausage (optional)

20g (2Tbsp) Cornstarch (potato starch, wheat flour available)

2 Eggs (1~2 pinches of salt)

1.5g (0.5tsp) Salt

A little pepper powder

1. 200g Potatoes, peel the potatoes, then thinly sliced, thinly sliced. 30g Carrots, slice the carrots and join, 1.5g (0.5tsp) Salt. Add salt and mix well, then marinate for 10 minutes.

2. After 10 minutes, throw away the moisture, 40g Sausage (optional). Thinly slice the sausage and add 20g (2Tbsp) Cornstarch, a little pepper powder.

3. After mixing all the ingredients well. Cooking oil, put them all in a pan and spread them out into a donut shape, tidy up the shape. Cook on low heat for about 10 minutes. Place the plate and turn the pan over.

4. Cook the back side over low heat for about 5 minutes, 2 Eggs, 1 or 2 pinches of salt. Cook for an additional 5 minutes on low heat. Finish when the eggs are cooked with a sunny side-up. Parsley, crushed red pepper. Ideal view of a potato nest holding a fried egg.
