It’s a blueberry crepe with amazing color and flavor. The blue color goes well with the blueberry feel, so I made a cake by layering crepes with four different shades of blue, and the cross section seems to give it a mysterious feel. I add blueberry puree to the crepes and cream to make it taste like blueberries, and I use buttercream cheese to harden and cut neatly.
Ingredient
100g grated blueberries
35g sugar
4g lemon juice
5 eggs
50g sugar
1g salt
5g vanilla extract
260g soft flour
600g milk
50g blueberry juice
80g melted unsalted butter
blue food coloring
150g unsalted butter
300g cream cheese
150g powdered sugar
20g cornstarch
1g salt
30g blueberry juice
5g vanilla extract
50g fresh cream
Recipe
Make a blueberry smoothie
1. Place the finely ground blueberries in a mixer into a saucepan and bring to a boil with the sugar over low heat.
2. When the mixture thickens, add lemon juice and boil a little more, then put in a bowl, let cool.
Make blueberry crepes
3. Add sugar, salt and vanilla extract to the eggs and mix well.
4. Add a little flour and milk and mix well, then add the rest of the milk and mix well.
5. Add blueberry puree, melted butter and blue food coloring and mix well.
6. Strain through a sieve, cover with cling film and refrigerate for about 1 hour.
7. Bake 5 sheets of 4 colors in a heated pan over low heat and cool in the refrigerator.
Make cream cheese butterĀ
8. Beat butter on low speed, add cream cheese and beat with a whisk.
9. Add powdered sugar and whisk, then add cornstarch and salt and whisk.
10. Add blueberry puree, vanilla extract, blue food coloring and whisk.
11. Add fresh cream (room temperature) and beat to complete the cream.
12. Place crepes on a spinning cutting board, start with a darker color and spread cream on top.
13. Top with whipped cream and garnish with blueberries.
14. Hardens more than 2 hours in the refrigerator.
