I made a lovely peach shaped cookie. It’s a cookie that was popular on social media a few years ago, but I made it because I’ve been thinking about peaches lately. I’ve tried cookie dough several times with different ratios, but I think this recipe has a good consistency and bakes well without separating too much. I wanted to make peach cookies with real peaches, so I boiled the peaches and boiled the syrup and pulp. It seems that the color of the cookies will be better when baked so that the color of the cookies is barely visible. I had to make the peach syrup redder than I thought with coloring. It’s really peachy and cuter than I thought, so I’m very pleased with making it.
Ingredient
1 peach
30g sugar
200g water
40 g unsalted butter
70g powdered sugar
1 egg
3g vanilla extract
5g lemon juice
185g soft flour
10g honey
Food coloring
Recipe
1. Cut peaches into a pot with sugar and boiled water, when the peaches turn clear and have syrup, turn off the heat, drain the syrup and keep it separate.
2. Put the residue into a blender and puree, put it back in the pot, stir well, let it cool.
3. Lightly beat unsalted butter, add powdered sugar and mix well, then add eggs, vanilla extract and lemon juice and mix well.
4. Sift the flour into the mix, divide the dough into 20g portions, shape into a circle and place in the oven.
5. Bake for 15 minutes in a preheated oven at 170 degrees for 20 minutes, while the cake is still warm, remove the center of the cake.
6. Mix the diced biscuits, boiled peaches, and honey and place in a piping bag.
7. Fill (6) in the center of the cookie and sand the 2 cookies together.
8. Add red and white food coloring to the cooled syrup and mix well. Dip the cookies in the color, then let dry for 1 minut
