I made a lovely pastel rainbow crepe. It’s a basic crepe with whipped cream inside, but I think it’s full of lovely feeling when it’s baked in 6 colors.
♥ Ingredients
5 eggs
65g sugar
1g salt
5g vanilla extract
250g soft flour
625g milk
90g melted unsalted butter
Food coloring (red, orange, yellow, green, blue, purple, white)
Fresh cream (500g fresh cream + 50g sugar)
♥ Recipe
1. Add the sugar and salt to the eggs, mix well, then add the vanilla extract and mix well.
2. Sift flour, add 125g of milk, mix well, then add the remaining 500g of milk and mix well.
3. Add melted unsalted butter, mix well, filter through a sieve and marinate in the refrigerator for about 1 hour.
4. Divide the dough into 6 parts and add food coloring for color.
5. Pour the crepe batter into the pan that has been cooked on low heat, spread it out, when you see foam, turn it over and cook a little more and then let it cool.
6. Place a crepe on a cutting board and cover with a thin layer of whipped cream.
