Quick and Easy Pound Cake Recipe | Perfect, Dense, Moist Loaf Lemon Cake

This is a really quick and easy recipe, very tasty. Moderately sweet, refreshing lemon flavor lingers in the mouth. Really good moist and rich flavor.

2 eggs

110g cake flour

90g sugar

100g room temperature unsalted butter

2g baking powder

6g honey

1g salt

1 lemon

100g sugar powder

22g lemon juice

1. Baking pan size : 160 x 80 x 63mm, butter the pan. Refrigerate until use.

2. 1 lemon. Put in boiling water and blanch for 15 seconds, wash in cold water. 2 room temperature eggs, 90g sugar, 6g honey, 1g salt. Mix until sugar is completely dissolved. The sugar is all melted and you can’t feel the particles.

3. 100g room temperature unsalted butter. I’ll whip the butter on medium speed, whip until it is bulky and light in color. That’s enough, 110g cake flour, 2g baking powder, put it through a sieve, mix it.

4. Now I’m going to add the egg mixture to number 3 and mix it. When completely mixed, add another egg. Be careful not to overmix the batter. Lastly, I’ll also add the cleaned lemon peel. Be careful if you add the white part as it can taste bitter, mix lightly.

5. I took the baking pan out of the fridge, put the batter, spread it flat. Hit the floor so that there is no empty space. 160℃ (320℉) 50 minutes.

6. Remove the cake from the pan immediately after coming out of the oven. It tastes better if you seal it well with plastic wrap and leave it at room temperature for a day.

7. 100g sugar powder, 22g lemon juice, mix well. Sprinkle lightly over the cake. I also added mint.
