Potato Mochi Cake | Gluten-Free Glutinous Rice Cake Recipe

Chewy potato rice cake! I made a potato mochi cake. The dough made by mixing boiled potatoes with glutinous rice flour is baked to a golden brown color, so the top is slightly crispy and the inside is chewy. Depending on the dryness of the glutinous rice flour, the consistency of the dough may vary, so you can adjust it with the amount of milk. I think it’s a fun and unique potato dish that feels soft to the touch. It’s easy to make and it’s good to make it when you have a lot of potatoes.

[ Ingredients]

400g Boiled potato

100g Sugar

6g Salt

300g Warm milk

2 Eggs

200g Glutinous rice flour

3g Baking powder

50g Melted unsalted butter

1. Mash the boiled potatoes finely, then add about 50g of sugar, salt, egg, and milk and mix.

2. Add glutinous rice flour and baking powder and mix, then add all remaining milk and mix.

3. Add the melted butter, mix well and pour into the oven pan.

4. Bake in a 180 degree oven for 35 to 40 minutes, cool slightly, and cut.
