Hello. This cake is a strawberry roll cake that is eye catching. Recently, I was impressed with @mioka24’s roll cake on Instagram, and I wanted to try making one too. However, I made the cake recipe on my own. Strawberries were inserted in mascarpone whipped cream. The outside was rolled up with strawberry jelly, so if you take a bite, the strawberry flavor comes out. It’s not as difficult as you think. Enjoy the video till the end and try making it once,

Ingredient
♥︎ Sliced Strawberries Jelly
65g water + 13g powdered gelatin
165g hot water
60g sugar
6g Kirche (cherry liqueur)
3mm thick sliced strawberries as needed

70g egg yolks
15g sugar
85g egg whites + 43g sugar
40g cake flour
20g milk
11g melted butter

80g mascarpone cheese
10g sugar
45g condensed milk
230g chilled heavy cream
2g vanilla bean paste

Recipe
1. Pour in the cooled jelly water. But, if completely submerged, the strawberries will float. So, pour only until just before the strawberries are submerged at first. Harden in the refrigerator for about 10 minutes. The jelly is slightly hardened. Pour in the jelly water so that the strawberries are completely submerged. Refrigerate until completely hardened.
2. Whisk until the yolk turns pale yellow. Use cold egg whites to beat meringue. Raise the meringue adding 1/3 of the sugar every 30 seconds. Mix 1/3 of the meringue into the yolk better first. Divide into two portions of the cake flour and mix. Add all the remaining meringue and mix. Milk is lukewarm. Melted butter is warm at 50°C.
3. Prepare the strawberries by cutting off the stems and tips. I forgot to add vanilla bean. I’m glad I put it in now. Trim the one side of the roll sheet. Make several slits to allow the sheet roll smoothly. Trim to inward angle at opposite side of the sheets. Pipe three lines of cream on the one quarter in front of you. Put it in the refrigerator for 3-4 hours.
4. Apply a small amount of oil to the Teflon sheet. Apply jelly on the surface of the roll cake. Cover with oiled Teflon sheet. Apply jelly. Harden in the refrigerator.
