Hello. Today I made a beautiful fruit pie. This pie design has been something I’ve been wanting to make for a long time. Crispy on the outside and filled with sweet jam and cream on the inside! Beautiful fruit pie! It is a basket pie that is good to give as a gift with a heart full of love.

● Pie finished size ( Diameter 16cm * 5cm )

● Ingredients

● Easy, delicious and crispy pie dough

250g all-purpose flour (1 cup + 3/4 cup)

150g unsalted butter (1/2 cup + 3Tbsp)

60g cold water (4Tbsp)

2 g (1/2 tsp) salt

6g sugar (1tsp+1/2tsp)

1 yolk

● Egg wash

Yolk: Water = 1:2

140g cream cheese (2/3 cups)

20g sugar (1Tbsp+2tsp)

3ml lemon juice

120g Heavy cream (70% whipped)

50g Fruit Jam ( Lemon, Mango, Strawberry, Blueberry,,,,)

● Recipe

1. Use cold cube butter. Coat the butter in the flour, cut it small. Use both hands . Pour in the yolk mixture. Mix like cutting. Please make it roughly in one lump. Refrigerate 30 minutes.

2. Prepare the mold. Wrap 2-3 layers of aluminum foil. Roll out the dough long and thin. 1 hour in the refrigerator.

3. Cut it into 6cm wide. Slide it out to a length of 51cm. Cut the rest of the dough in 1/2. Push it in a circular motion. Please cut it larger than the mold. This will be the bottom part of the pie. This will be the lid part of the pie. Refrigerate until use. I have to do it with this. Actually, it doesn’t matter what pattern it is. You can use what you have. Now you just have to repeat the pattern. Trim the protruding part. Apply water for bonding. Press firmly on the connection part.The seam must be pressed firmly.

4. If the dough becomes soft while making, put it in the refrigerator for a while, 30 minutes in the freezer. Make a pretty lid.30 minutes in the freezer. Apply egg wash.

5. Bake at 195C(384F) for 15-17 minutes. It’s like crocheting. Bake at 195C (384F) for 10-12 minutes. Let it sit until it cools down. Remove the mold after it cools down.
