I made a tofu dish that is easy to make and tastes good. Crispy fried tofu and eggplant, with deep and rich tomato sauce, It’s great for a quick dinner. The whole family loves it, so it disappears as soon as you make it.

300g, 1 Tofu
100g, 1 Small eggplant
10g (1Tbsp) Cornstarch
20g Onion
20g Garlic
20g Green onion

100g, 1 Small tomato
100g (5Tbsp) Tomato pasta sauce
2g (1tsp) Chili pepper powder (can be omitted)
5g (0.5Tbsp) Sugar
1g (4 pinches) Salt
A little pepper powder
200ml Water
Starch water
✤ Starch water
5g (0.5Tbsp) Corn starch (any type of starch)
40g (5Tbsp) Water

1. 20g Garlic, 20g Green onion, 20g Onion, 300g Tofu. Remove the moisture from the tofu, cut into cubes, 100g Tomatoes, 100g Eggplant.
2. Put the eggplant in a plastic bag, 10g (1Tbsp) Cornstarch, shake the bag to spread the starch evenly.
3. 5g (0.5Tbsp) Corn Starch (Any type), 40g (5Tbsp) Water, the starch is prepared in advance. Cooking oil, pour enough cooking oil and fry the tofu. The eggplant is also joined to the side, take the eggplants out first. Fry the tofu a little more so that it doesn’t break. The tofu is finished by wearing yellow clothes that cannot be seen white.
4. In the oil in which tofu was fried, add garlic, green onion and onion and saute. When all the ingredients are cooked, 2g (1tsp) Chili pepper powder (can be omitted), stir-fry over low heat to make chilli oil, 100g (5Tbsp) Tomato pasta sauce, 200ml Water, Chopped tomatoes, 5g (0.5Tbsp) Sugar. Boil the tomatoes until tender, add tofu and eggplant and mix 1g (4 pinches) Salt, starch water. Do not add starch water all at once, add little by little while mixing. Burning red luster, pure taste when eaten.
