The most Fluffy and Moist Cake I have ever had! No Oven! No Baking powder! Extremely Easy homemade.


* Ingredients

3 Large Eggs

30g (2 tbsp) Cooking oil

45g (3 tbsp) Milk

70g (0.54 cup) Cake flour

2.5ml (1/2 tsp) Vanilla extract (optional)

2g (1/4 tsp) Lemon juice

50g (2 tbsp) Sugar

1. 3 large eggs, separating egg yolk and egg white. Add 30 grams (2 tablespoons) of cooking oil to 3 egg yolks, 45 grams (3 tablespoons) of milk. Stir well and let them mix well.

2. 70 grams (0.54 cup) of cake flour, sifted into the mixture. Mix well, add 2.5 ml (1/2 teaspoon) vanilla extract, omitting it if you don’t have it. Mix well and set aside.

3. Add 2 grams (1/4 teaspoon) of lemon juice to the 3 egg whites. Whip on medium-high speed, total need 50 grams (2 tablespoons) of sugar, add 1/3 of sugar when large fish-eye bubbles appear. Continue whipping on medium-high speed, adding 1/3 of the sugar when small fish-eye bubbles appear. Continue to whip on medium-high speed and add the remaining 1/3 of the sugar when there are visible lines. Then turn to medium-low speed and whip. Whip until it lifts to straight, sharp, dry peaks, also okay if you whip to medium peaks.

4. Add 1/3 of the meringue to the batter and mix well, then add the rest of the meringue and mix well. The cake batter should be in this state, relatively dry and not easy to drip.

5. Prepare a 6-inch cake mold, I used a live-bottom mold, in order to prevent the bottom of moisture entry, you need to wrap a layer of aluminum foil. Pour the batter from the high side into the cake mold, use a spatula to smooth out the surface. Shake out the large air bubbles inside. Wrap the top with another layer of aluminum foil to prevent moisture dripping down into the cake batter.

6. Put into the steamer with boiling water, cover and steam for about 45 minutes on medium heat. After steaming, take it out and remove the aluminum foil. Shake twice to remove the heat, then turn upside down to cool. Let it cool until it is not hot and then you can unmold it.

7. First, press from the edge to the middle with your hand, so that the surrounding area can easily come off. Take out the cake and then unmold the bottom. A very fluffy and moist cake is ready, cut and enjoy, it’s so tasty!
