Sponge cake sheet | Basic Sponge cake sheet Recipe, Genoise

I made a fluffy sponge cake sheet! It cuts well, so I think it’s good to use it as a basic cake sheet. Remove the sheet from the oven and let it cool. After it cools down, cut it into desired size and use it. These days, I almost always make cake sheets this way.

▶Ingredients
-Basic

4 Egg yolk

45ml Milk

40g Melted butter

4 Egg white

100g Sugar

110g Cake flour 

1/2ts Baking powder

-Chocolate sheet

10g Cocoa powder

-Green tea sheet

4 Egg yolk

45ml Milk

103g Cake flour 

7g Green tea powder

1/2ts Baking powder

▶Recipe

1. Put the egg yolk in the bowl and let loose, then add milk + melted butter and mix.

2. Put egg whites in another bowl and whip it. When big bubble comes up, divide sugar into three and whip to make meringue.

3. Add sift dry ingredients and mix. Add egg yolk mixture and mix.

4. Pour the dough into the pan and bake in a 35~40 minutes for 180 degree preheated oven.
