Makes 16 Mini Cheesecakes

2 Packs Golden Oreo Biscuits OR 265g any Biscuit/Cookie

100g Melted Unsalted Butter

350g Diced Mango (Fresh or Frozen)

500g Cream Cheese

3/4 Cup Powdered Sugar

2 Teaspoon Vanilla Extract

300mL Heavy Whipping Cream

TOPPING:

1/2 Cup Candy Melts

250mL Heavy Whipping Cream

1 Tablespoon Powdered Sugar

1 Teaspoon Vanilla Extract

Extra diced Mango

▶Recipe

1. 2 Packs Oreo Cookies or 265g any cookie/biscuit you enjoy + 100g Unsalted Butter. Refrigerate while making filling

2. 350g Mango fresh or frozen. 500g Cream Cheese + 3/4 Cup Powdered Sugar + 2 Teaspoons Vanilla

3. 300mL Heavy Whipping Cream, Freeze overnight (Makes 16) Refrigerate while making topping

4. Parchment paper strip, candy Melts dry completely

5. 250mL Heavy Whipping Cream + 1 Tablespoon Powdered Sugar + 1 Teaspoon Vanilla

6. Mango, Refrigerate 1-2 hours to thaw before serving.
