The buttercream I made this time is Special American Buttercream. If you are unhappy with the taste of traditional American buttercream, I am sure you will be very satisfied with this recipe. Since this is an egg-free buttercream recipe, you only need to whip it well. In addition, you can taste the chewy and soft buttercream with a few ingredients that I added. And you will fall in love with the subtle and luxurious sweetness once again.

 Ingredients

● Cherry Sponge Cake

(Mold size: 19.5cm*19.5cm*4.5cm)

40g milk chocolate ( 1/4 cup )

50 g milk ( 3 Tbsp + 1 tsp)

30g vegetable oil ( 2 Tbsp ) – grapeseed oil, canola oil, soybean oil, corn oil O / olive oil X)

Amaretto 3ml

4 yolks

15 g sugar ( 1 Tbsp )

70g cake flour (1/2 cup) – (can be replaced with 62g all-purpose flour + 8g cornstarch)

(Hershey’s) 10g cocoa powder ( 1 Tbsp + 1/2 Tbsp)

8g tart cherry powder (can be omitted if you don’t have one)

1/2 tsp baking powder

4 egg whites

55g sugar ( 1/4 cup + 1tsp )

Food coloring (red color)

● Cherry syrup

12-13 cherries

10 g (2 tsp) water

40 g sugar ( 3 Tbsp )

7.5g lemon juice ( 1/2 Tbsp )

3ml Kirsch

● Special Vanilla Buttercream Frosting

320g unsalted butter ( 1 cup + 1/2 cup )

110g sugar powder ( 3/4 cup + 2 Tbsp )

30g starch syrup ( 1 Tbsp + 1 tsp )

135g white chocolate ( 3/4 cup + 2 Tbsp )

1 g of salt

3ml vanilla extract

60g heavy cream ( 4 Tbsp )
