3 egg whites 100g

½ cup sugar 80g

1 tablespoon honey/turmeric starch 10g

1. You can also use a madeleine mold or a muffin pan. Madeleine mold 27g Bake cake, Bake 13 minutes 180 degrees. Muffin mold 35g, bake 190 degrees 16 minutes.

2. Refrigerate for up to one day only. The reason for using toilet paper is that the texture becomes tougher. Adding honey will make the moisture last longer.

3. It’s best to burn the butter until it’s light brown to dark brown. If you burn too much, it will have a bitter taste, so be careful when burning. Add burnt residue to the pot. If it is too black, it is better to filter it.

4. Add almond flour to make it crispy and chewy. If you don’t have one you can substitute with soft flour but the texture will be different. When cooked it is light brown, soft and moist.
