Unbaked Strawberry Cheesecake | Delicious and Smooth In Every Bite

This is a rare cheesecake recipe that requires no oven and no baking. I made it in strawberry flavor with a nice pink color. I know it goes well with cheese. Since heart cake is very popular lately, I put it in the middle and jelly around it.

♥ Ingredients

Cake mold 15cm x 15cm

Rareberry Cheesecake (12cm)
120 g cream cheese
25g sugar
80g strawberry juice
120ml fresh cream
10g sugar
3g gelatin powder
20g water

Strawberry puree
150g frozen strawberries
20g sugar
1 tablespoon lemon juice

♥ Recipe
1. Place frozen strawberries, sugar and lime juice in a small saucepan and mix strawberries with sugar.
2. Mix cream cheese and sugar until smooth.
3. Cook (1) over the heat until the pulp is crushed. Strain the strawberries through a sieve to remove the fibers.
4. Add 80g of the mixture to item ② and mix well.
5. Add the sugar to the whipped cream, then add (4) and mix well.
6. Sprinkle gelatin in water until soft, dissolve in boiling water. Add to (5) and mix.
7. Place a piece of food wrap on the bottom of a 12cm long heart-shaped box and secure it with an elastic band to prevent it from moving. Pour ⑥ in, scrape the surface flat, and chill in the freezer for 3 hours or until firm.

Rare Cheesecake
80 g cookies of your choice
20 g unsalted butter
80g cream cheese
10g sugar
80ml fresh cream
2 g gelatin powder
20g water
1 teaspoon lemon juice

♥ Recipe
1. Crush the cookies into small pieces, add melted unsalted butter and mix well, place the cookies in the bottom of a 15 cm mold and place in the refrigerator for at least 30 minutes to harden.
2. Take the strawberry heart-shaped rare cheesecake out of the celluloid and place it on top of the cookie layer.
3. Open the mold and place the mousse film on all four sides.
4. Add the sugar and cream to the cream cheese, in that order, and mix.
5. Sprinkle gelatin in water until soft, dissolve in hot water, add (4) and mix well. Add lemon juice and mix.
6. Place the rare cheese mixture in the bag and squeeze around the strawberry rare cheesecake. Flatten with toothpick and chill in refrigerator for 30 minutes.

Strawberry jelly
70g strawberry juice
2 g gelatin powder
15g water

Lemon Jelly
1 pack of strawberries
150g water
1 teaspoon lemon juice
30g sugar
4 g gelatin leaves

♥ Recipe
1. Make strawberry jelly. Sprinkle gelatin in water to soften, then dissolve in boiling water.
Add the dissolved gelatin to the strawberry mixture, mix well and pour over the rare cheesecake. Refrigerate for 30 minutes.
3. Wash strawberries, remove stems and cut in half lengthwise. Arrange them on top of the strawberry jelly.
4. Make lemon jelly. Blanch gelatin in ice water.
5. Put water, granulated sugar and lemon juice in a pot and cook until the granulated sugar dissolves.
6. Squeeze out the water in the gelatin dish and add it to the water and stir to dissolve. Cool the agar by placing it in ice water until the temperature reaches about 20°C.
7. Pour the jelly over the stacked strawberries and refrigerate for 5 hours or so.
